The beverage program, curated by mixologist Arcadius Ryback, highlights seasonal produce and locally sourced ingredients. Among its signature creations is the Airmail, crafted with Kasa Kana rum, Laguna kiwot honey sourced from Kaya Kusina, lime, and sparkling wine. The cocktail delivers a refreshing balance while showcasing the unique character of heirloom honey. Seasonal offerings are regularly introduced, giving guests something different to look forward to with every visit. Alongside these originals, the bar also serves classic cocktails prepared with meticulous attention to detail and respect for every spirit used.
Honoring Filipino and Southeast Asian Culinary Traditions
Chef Stephan Duhesme, recognized for his work at Filipino restaurant Metiz, was brought in as a consultant for the restaurant’s opening menu. The dishes take inspiration from Filipino and Southeast Asian flavors, presented in a refined yet approachable manner. Guests can begin with the prawn lumpia, a crisp and flavorful appetizer, before moving on to skewers cooked over open flames that impart a rich smoky character. Another standout is the fried pompano, complemented by brown butter and calamansi, creating a balance between richness and brightness. For dessert, diners often gravitate toward the panna cotta topped with honey and asin tultul, a coarse sea salt from the Visayas, which combines creamy, sweet, and savory flavors in every bite.

Every detail at Toma Toma has been carefully considered. The interiors merge industrial influences with warm and inviting elements, featuring blooming capiz shell chandeliers, dark wood furnishings, tropical-inspired wallpaper, and handcrafted décor created by Filipino artisans. Even the venue’s signature scent, a blend of black pepper, sandalwood, and ginger, was personally developed by co-owner Mike Hearn. The overall atmosphere strikes a balance between sophistication and comfort, making it suitable for after-work gatherings, intimate dinners, or late-evening conversations. A private dining room equipped with its own mixology station, along with a mini bar that can transform into a DJ booth, further expands the venue’s versatility.
