MAKATI CITY — As part of its 50th anniversary celebration, The Peninsula Manila will stage an exclusive two-night dining collaboration at Old Manila, its signature restaurant. Happening on May 22 and 23, 2026, from 6:00 p.m. to 9:30 p.m., the event features a four-hands dinner prepared by Old Manila Executive Chef Rémy Carmignani and Senior Chef de Cuisine Yohan Da Costa of Peter, the flagship restaurant of The Peninsula Tokyo. The dinner is priced at PHP 8,200 per guest and will only be offered for two evenings.
The collaboration highlights the meeting of two French chefs whose culinary journeys have been shaped by years of international experience. Both are known for their strong foundations in classical technique, careful attention to seasonality, and respect for high-quality ingredients. Carmignani continues to shape Old Manila’s French-inspired identity through refined dishes built around premium local produce, while Da Costa has earned recognition for Peter’s Modern French cuisine, which combines traditional French methods with the precision and balance of Japanese ingredients.
The Chefs Behind the Collaboration
Old Manila first opened in September 1976, the same year The Peninsula brand expanded beyond Greater China for the first time. Meanwhile, Peter has been part of The Peninsula Tokyo since 2007 and entered a new era last year after Da Costa introduced its Modern French concept inspired by Japanese precision and seasonal sourcing.
Both chefs were trained in Michelin-starred restaurants in France before building careers across Asia. Da Costa previously held leadership positions in Japan and Australia, and in 2024, he led Team Japan to victory at the Bocuse d’Or Asia competition. Carmignani, on the other hand, sharpened his skills in the kitchens of renowned chefs Guy Savoy and Daniel Boulud before bringing his expertise to Manila, where he has been redefining Old Manila’s culinary direction. Rather than relying on the usual “East meets West” approach often seen in hotel collaborations, this partnership focuses on thoughtful execution, balanced flavors, and genuine craftsmanship.
A Menu That Connects Two Culinary Styles
The multi-course menu alternates dishes from both chefs, creating a conversation between their individual cooking styles. Carmignani presents L’Asperge Blanche, featuring French white asparagus paired with osmanthus, pomelo, hollandaise, and Oscietra caviar. Da Costa responds with L’Œuf de Poule, a poached egg served with truffle, mushroom duxelles, yellow wine sauce, and kinome.
Other highlights include Carmignani’s bouillabaisse made with Atlantic turbot, Hokkaido scallop, and octopus, as well as Da Costa’s roasted Japanese beef served with white asparagus, carrot mousseline, yuzu-kosho, and beef jus. French culinary tradition remains at the heart of the dinner, though each chef brings a unique perspective. Carmignani’s dishes lean toward richness and warmth, while Da Costa’s creations reflect the restraint and precision associated with Japanese dining culture.
