MAKATI CITY — On the third floor of The Shops at Ayala Triangle Gardens, a discreet entrance leads to one of the country’s most celebrated dining rooms. With just 24 seats wrapped around an open kitchen, Helm offers a front‑row view of culinary precision. It is the first and only restaurant in the Philippines to hold two Michelin stars, a distinction that has put Makati firmly on the global fine‑dining map.
A Personal Culinary Philosophy
Chef Josh Boutwood’s British‑Filipino heritage and Spanish upbringing infuse every dish with a layered, personal perspective. His menu, which changes every four months, invites guests into a theatrical dining experience where storytelling meets gastronomy. Past themes have ranged from the Philippine color spectrum to expansive concepts like Harry Potter and Star Wars. Each course is presented with surgical intent, allowing diners to watch as chefs assemble plates right in front of them.
Design and Tasting Options
The restaurant moved from BGC to its current Makati location in 2023, doubling its capacity. Its minimalist design, black walls, copper accents, and open chef’s counters reflect the raw honesty of Boutwood’s cooking philosophy: to serve food that is precise, intentional, and deeply personal. Guests can choose between an eight‑course or twelve‑course tasting menu, with prices inclusive of VAT; a wine pairing may be added for an additional cost per person.
The Historic Two‑Star Achievement
The achievement of two Michelin stars came as a shock even to Boutwood himself. At the inaugural awarding ceremony last October 30, 2025, Helm was the lone two‑star recipient, a moment that left him and his team overwhelmed with emotion. Rather than joining any after‑party, Boutwood returned to the restaurant to be with his team. “I can’t take all of the congratulations,” he later reflected. “It’s a team effort.” Since that night, Helm has been fully booked, with demand doubling overnight and reservations still difficult to secure months later.
An Intimate Dining Experience
Beyond the accolades, the real draw of Helm remains the quiet intimacy of its service. Seated at the counter, guests become part of the kitchen’s daily rhythm, able to observe, interact, and taste the story unfolding before them. Michelin inspectors praised the restaurant for its “layered, expressive flavors; intricate presentations; and a level of precision that feels almost musical in its pacing.” Whether inspired by street‑food memories or a cinematic universe, each meal at Helm is an evolving narrative told up close, one thoughtful course at a time.
