Back at the intimate Chef’s Table venue inside Balmori Suites, Boutwood has revived Osteria, the Italian pop-up that earned a devoted following during its first run. Following its successful 2025 debut, Osteria is back for a second season, but only until June 28, 2026.
An Italian Pop-Up Focused on Comfort and Familiarity
Seven months after Helm earned two Michelin stars, the highest distinction awarded in the inaugural Philippine Michelin Guide, Boutwood admits that the recognition has brought added pressure. Yet instead of slowing down, he has embraced a new challenge. “But it’s strange how my mind works,” he shared with GMA News Online. “I have to add more in order to do more.” That mindset inspired the return of Osteria, a concept that steps away from the precision and complexity of fine-dining tasting menus and instead celebrates approachable, comforting Italian cuisine. “It’s almost refreshing to be back at Balmori, in my home turf,” Boutwood said. Unlike his more formal dining concepts, Osteria thrives on lively conversations, quick table turnover, and a relaxed atmosphere where guests can simply enjoy good food and company.
A Rotating Menu Designed for Returning Guests
For its second season, Osteria introduces a rotating menu concept that rewards repeat visits. During the first week, diners can revisit popular dishes from the original run. New menu items are gradually introduced throughout the second and third weeks, while the fourth week brings back fan favorites. The final week serves as a farewell celebration before the pop-up closes once again. The strategy has proven successful, with packed dining rooms and returning patrons eager to sample both familiar and new offerings. Among the most talked-about dishes are the Chilean Mussels, simmered with Calabrian ’Nduja to create a rich and savory broth best enjoyed with the signature sourdough bread from Boutwood’s The Test Kitchen. Another standout is the Radicchio Salad, where the vegetable’s natural bitterness is balanced by creamy Italian gorgonzola and sweet wild honey.
Pasta Takes Center Stage
Pasta remains the heart of the Osteria experience. Crowd favorites include rigatoni paired with fennel sausage and a velvety mushroom cream sauce, as well as a classic lasagna layered with handmade pasta, braised beef, rich béchamel, and generous amounts of cheese. For main courses, guests can choose the Pork Cotoletta, a substantial breaded pork chop finished with lemon and sea salt, or the lighter Barramundi al Forno, featuring roasted sea bass prepared with olive oil, sea salt, and confit olives.
Ending on a Sweet Note
Dessert remains an essential part of the experience. “In any of my restaurants, it is imperative to end on a sweet note,” Boutwood explained. Guests can indulge in Pane Budino, a bread pudding infused with Marsala wine and raisins that gives the English classic an Italian twist. Another highlight is a silky pannacotta served with blood orange syrup and roasted pumpkin seeds, offering a balance of sweetness and texture.

Located at the Chef’s Table of Balmori Suites in Rockwell Center, Makati, Osteria will run only until June 28, 2026.
