MAKATI CITY — A concentrated new food hub is bringing a trio of distinct dining concepts to the ground floor of Signa Designer Residences, the upscale condominium at the corner of Valero and Rufino Streets in Salcedo Village. Developed by the Mothership group, the team behind Crisp on 28th, the food district comprises three adjacent spaces: Bait‘s, Sabaw, and Sprout. Each outlet offers a different culinary angle, ranging from market-driven seafood to an elevated Filipino soup bar and a health-oriented takeaway counter.
Three Concepts, One Location
Bait‘s is led by Chef Joseph Margate, an Eleven Madison Park alumnus and a 2012 Food & Wine Best New Chef nominee. The restaurant takes a “market-driven” approach, with a menu that changes based on seasonal availability and fresh seafood catches. Standout dishes include tilapia marinated in fish sauce and turmeric, served with cauliflower couscous and Vietnamese dipping sauce, as well as a spicy tuna burger and pickled oysters with kimchee puree.
Sabaw is billed as the first Filipino soup bar, focusing on various broths and concoctions prepared by Chef Cheska Cariño. The idea was to present sabaw, the Filipino answer to pho, ramen, or laksa, in a fresh, modern format. Guests can choose from five 16-hour simmered soups (Bulalo, Tinola, Sinigang, Molo, and Binakol), then select their starch and add‑ons for a fully customizable bowl. Rice and noodle bowls, plus small plates, round out the offering.
Sprout is a quick‑service, takeout concept focusing entirely on healthy and organic fare. The menu includes salads, wraps, sandwiches, and energy shots, making it a convenient option for office workers and residents who want wholesome meals on the go.
Beyond the Food District
The Mothership group is also launching The Red Light along Felipe Street in Poblacion, intended as an incubator for new culinary talents and a creative playground for chefs. Meanwhile, its popular Pink Panda brand is expanding to the Fort and Ortigas areas.
