Baliwag Lechon Manok was founded by Dwight and Dolores Salcedo, who built their first kiosk inspired by the lechon manok craze of November 1985. The name comes from Baliwag in Bulacan, where Dolores grew up. They later opened Baliwag Grill & Restaurant as part of their expansion to offer more dishes and serve more customers.
