TAGUM CITY — The scent of roasting pork will fill the air as the local government launches the Pigrolac Pinaka Lami-Chon sa Tagum competition on November 12, 2026. The culinary event takes place at the Tagum City Trade and Exhibition Center in Rotary Park, starting at 1:00 PM.

A Culinary Showdown in Tagum

The competition invites local lechoneros, amateur cooks, culinary enthusiasts, and professional chefs to showcase their signature roasting techniques. Open to Tagum City residents aged 18 and above, the event is a highlight of the Kulinarya Piyesta sa Tagum 2026. It aims to celebrate local food artisans.

Participants are eager to prove their mettle and present their best creations to the public and a panel of judges. The search is on for the most delicious and unforgettable lechon, promising a thrilling display of culinary prowess and local heritage during the festival.

Strict Rules for the Perfect Roast

To ensure a fair and high-quality competition, organizers have laid out strict guidelines for all contestants. Each participant must prepare a whole roasted pig with a minimum live weight of 40 kilograms, and the pigs must be fed with Pigrolac to guarantee quality meat.

Crucially, the entire roasting process must be done on-site, allowing the public to witness the meticulous preparation and cooking methods. They must also present their finished lechon in a highly creative and visually appealing manner to stand out from the fierce competition.

Registration requires a valid ID and a Meat Inspection Certificate, with submissions due by October 30, 2026. Contestants must also adhere to stringent safety and hygiene protocols, ensuring the highest standards of food safety are maintained throughout the entire culinary showdown.

Judging the Perfect Lechon

The dishes will be evaluated based on three core criteria: crispiness of the rind, flavor and aroma, and visual appearance. Judges will look for the perfect balance of a crispy rind and tender meat. The flavor must be typical of high-quality lechon, free from off-odors.

Appearance is equally critical, requiring a shiny, glossy skin without blisters or cracks. The meat must be fully cooked, showing white meat near the shoulder and rump. The top three winners will take home cash prizes ranging from P5,000 to P10,000, along with a prestigious trophy.

Celebrating Local Culinary Talent

After the intense judging process concludes, attendees can look forward to a delightful feast. A lechon selling event will commence, with each participant provided a dedicated space to sell their mouth-watering creations to the hungry crowd of locals and tourists.

This vibrant celebration of local gastronomy underscores Tagum City's commitment to promoting food tourism and supporting small businesses. By putting the spotlight on local lechoneros, the event fosters community pride and highlights the unique flavors of Mindanao.
