DAVAO — The stoves were ablaze during the afternoon session of Day 2 at the N'YOG K2 DAVNOR Festival 2026 as six exceptional contenders entered the culinary arena. The Cookconut Challenge: From Local Ingredients to Market-Ready Dish placed coconut firmly in the spotlight, celebrating the versatility of Davao del Norte's most valuable crop.
A Culinary Showdown for the Coconut
The competition brought together talented chefs and food entrepreneurs from across the province, each tasked with transforming coconut into innovative, market-ready dishes. The aprons were on and the fires lit as contestants showcased their creativity, technique, and deep understanding of local ingredients. Judges evaluated entries based on taste, presentation, and commercial viability.
The challenge highlighted why coconut is called the Tree of Life. Every part of the fruit found its way into the competitors' creations, from coconut milk and pulp to macapuno strips and coconut sugar. The event demonstrated how traditional ingredients can be elevated into dishes worthy of restaurant menus and retail shelves.
The Winning Dishes
Amiel Bryan Carcedo of Mr. Brew claimed the championship with an air-fried stuffed white squid featuring coconut pulp as the main ingredient of the stuffing. The dish was paired with a sauce infused with coconut milk, creating a harmonious blend of oceanic and tropical flavors. His innovative approach impressed the judges and secured the top prize.
Jonalyn Sabid of Hungry Helper took second place with Coco Chicken Luntian, a coconut-inspired version of chicken cordon bleu. The dish featured coconut meat filling and coconut pulp breading, paired with a coconut milk and coconut sugar cream sauce. Her creation demonstrated how familiar dishes can be reinvented through local ingredients.
Rosalina Sator of Rosalina's Tasty Empanada earned third place for her Creamy Tasty Bibingka, an elevated version of the traditional rice cake topped with salted egg and sweet macapuno strips. The dessert honored Filipino heritage while introducing a modern twist that delighted the palate.
Honoring Every Contender
The competition also recognized the creativity of all participants. Samuel Jay Fernandez of Creamy Box Events and Sweets presented CocoSava Macapuno, a tropical treat blending creamy coconut milk, tender coconut strips, and velvety macapuno over a soft cassava base. His dessert showcased coconut in three delicious ways.
Alfredo Cortez of Alfredo's Grill showcased two dishes: Ginataang Hito, which used coconut pulp as breading and coconut milk as sauce, and Bicol Express. Ariane Maravilla of Mabuhay Bakeshop prepared CocoBliss Cheesecake, a coconut-inspired dessert with pandan and calamansi. Each entry reflected the depth of culinary talent in Davao del Norte.

The Cookconut Challenge formed part of the broader N'YOG K2 DAVNOR Festival 2026, which runs from October 1 to 3 at the Atrium of GMall of Tagum. The celebration carries the theme of niyog's yaman, oportunidad, gawa, at kaunlaran — wealth, opportunity, craft, and progress.
Exhibitors are showcasing coconut-based products ranging from food items to handicrafts and innovative by-products.
