MAKATI CITY — Spanish culinary tradition has found a new home in Makati with the opening of Asador de Aranda, one of Spain's established restaurant groups, at the Ground Floor of the EcoPlaza Building. The branch marks the brand's first venture into Southeast Asia and introduces its traditional Castilian cooking to Filipino diners. Founded in Madrid four decades ago, Asador de Aranda is known for its wood-fired roasting methods, which have been preserved through generations. Among the restaurant's signature offerings is Lechazo Asado, a Castilian specialty featuring suckling lamb slowly roasted in clay dishes inside wood-fired ovens. The traditional preparation uses only a few ingredients, allowing the lamb's natural flavor and tenderness to remain the focus. Raised through free-grazing practices and fed exclusively with its mother's milk, the suckling lamb develops the delicate texture and distinctive flavor associated with the dish. Other Spanish favorites on the menu include pulpo a la gallega, paella valenciana, patatas bravas, and entrecôte with Cabrales sauce.
