At the star-studded ASEAN Creative Industries Expo 2026 held inside the SMX Convention Center Aura, Holy Angel University's elite culinary school (HAU-SHTM) teamed up with the Angeles City Tourism Office to put Kapampangan food in the global spotlight, turning a simple cooking demo into a full-blown culinary battle for regional pride.
A Bold Culinary Gambit on the ASEAN Stage
Taking the stage was award-winning local instructor Chef Arnel Kann "Arkann" Santos. To add even more fuel to the fire, he co-headlined the live cooking showcase with celebrity chef Marvin Agustin, whose famous roast pig business, Cochi, was officially awarded a coveted Bib Gourmand spot in the legendary Michelin Guide. Instead of serving up a standard plate of pork ears and snout, Chef Arkann revealed a brilliant food innovation designed to make sisig accessible to different cultures across Southeast Asia. He completely dropped the pork and swapped it for premium beef rib finger. Food critics in the audience were amazed to find that the beef choice flawlessly replicated the exact chewy, smoky texture of traditional sisig. To make the dish an absolute masterpiece, he topped it with ultra-crispy deep-fried beef tadyang (ribs) for an intense crunch, before binding the entire plate together with a rich, authentic mixture of chicken liver and cow's brain to lock in that signature velvety creaminess.
