MAKATI CITY — Food enthusiasts have a limited time to experience GOXO’s celebrated Basque-Filipino cuisine as the MICHELIN-Selected dining concept takes over Sage Bar at Makati Shangri-La from August 27 to September 27, 2026. The month-long residency brings Grupo Pintxos’ signature live-fire cooking and charcoal-grilled dishes into a larger setting, offering diners a chance to experience the concept beyond its intimate 12-seat counter. The pop-up is also part of GOXO’s series of temporary dining appearances as it prepares to establish a permanent location.
A Different Way to Experience Basque-Filipino Cuisine
GOXO has built its reputation around traditional Basque-inspired dishes interpreted through local ingredients and Filipino culinary influences. Its signature approach centers on cooking over live fire, producing charcoal-grilled tapas that highlight the natural flavors of the ingredients. The restaurant’s prix-fixe format has become an essential part of the GOXO experience, with its menu combining Spanish culinary traditions with subtle contemporary touches. Among its notable creations is Jamon Talakitok, a pescatarian interpretation of Spanish cured ham that has become one of the concept’s signature dishes.
