Buto't Balat opened in Iloilo City in 1994, initially serving just two dishes: bulalo (prized for its bone, 'buto') and crispy pata (loved for its crispy skin, 'balat') — the pairing that gave the restaurant its name. Over three decades it grew into one of Iloilo's best-known native Filipino and seafood restaurants, with garden-style, native-hut dining and multiple branches around the metro.
