Chicken House traces back to a small inasal eatery on San Sebastian Street originally run by Eliza Velez Garrucho, whose family helped pioneer chicken inasal in Bacolod; she sold the business to architect Joe Cajili and his wife Pat in 1976, and the Cajili family built it into the city's best-known inasal restaurant. The flagship branch on Lacson Street opened in 1982, and it has grown to around nine branches across Negros.
