Max's Restaurant was founded in October 1945 by Stanford-educated teacher Maximo Gimenez, who opened a cafe on Scout Tuason, Quezon City serving American occupation troops after World War II. His niece Ruby Trota's fried chicken recipe became the signature dish that turned the cafe into a national institution known as 'the house that fried chicken built.' Today it is the flagship brand of the publicly listed Max's Group, Inc.
