ILOILO CITY — The 17th National Food Showdown officially opened today, October 16, 2026, at the Culinary Arts Center of the Iloilo Convention Center. The two-day culinary competition runs until October 17 under the theme "Kulinarya Rehiyones: Lasap Pilipino," bringing together the country's finest culinary talents.

A Record-Breaking Edition

This year's staging marks unprecedented growth for the National Food Showdown, with 57 institutions registered and 345 participants and teams competing. The roster is balanced between 32 academic institutions and 25 professional organizations, drawing elite talents from across the country including major delegations from Luzon.

Registration revenue surged by 25 percent in peso sales, signaling robust industry support and strong institutional commitment. The event is organized by the Iloilo City Government through the City MICE Center, in partnership with the Philippine Chamber of Commerce and Industry Iloilo. It represents the second time the premier culinary competition is being held in the city.

Celebrating Indigenous Ingredients

Opening day activities commenced at 8:00 AM, immediately immersing competitors into highly technical categories across three synchronized arenas. The Culinary Kitchen tested chefs on foundational regional ingredients including kadyos, native chicken, ubad, boneless bangus, batwan, and camuros rice.

The Pastry Display Area showcased live wedding cake staging while the Bar and Dining Area hosted regional coffee concoction battles. These challenges highlight the diversity of Filipino culinary heritage and the skill required to transform local ingredients into world-class dishes.

Grand Finale and Awarding

The second day elevates the technical threshold with complex live demonstrations. Morning sessions center on traditional regional cooking techniques such as Binakol and Guinata-an. The afternoon features the flagship Klasika Kulinarya category requiring simultaneous mastery over Kinilaw na Tanigue, Lengua Estofado, and Ibos at Mangga.

A live Cacao Challenge and high-octane Regional Flairing and Bartending performances round out the competition. The event wraps up Saturday evening with the Grand Awarding Ceremony at 5:00 PM, where winners will be officially announced before an audience of culinary professionals and enthusiasts.

Exhibitors Showcase Filipino Innovation

The Iloilo Convention Center Lobby hosts exhibitors from 9:00 AM to 5:00 PM daily, featuring brands like Ajinomoto as Gold Exhibitor and Aklan Oysters as Pearl Exhibitor. Other participants include RCBC, Coffee Brewtherhood, Five Star, Tablea and Mountain Joe, Hotel del Rio, Fuegos, Al Bin Packaging, Upshop, Nooms Cafe, Indays Pastil, and 60:40 Cafe.

The Philippine Chamber of Commerce and Industry Iloilo serves as the official partner in coordinating exhibitors. This partnership creates valuable opportunities for businesses to showcase products, expand networks, and connect with the culinary and business communities. Visitors can explore booths, discover local products, and support participating brands.

A Platform for Culinary Excellence

Founded by Chef Myrna Segismundo, the National Food Showdown is the Philippines' premier culinary competition dedicated to fostering excellence and honoring regional identity. It provides a national platform for student and professional culinarians to showcase world-class skills while promoting the country's diverse culinary heritage.

As the first-ever UNESCO Creative City of Gastronomy in the Philippines, Iloilo provides the perfect backdrop for this celebration. The event reinforces the city's status as a culinary capital and its commitment to nurturing the next generation of Filipino chefs. The showdown continues tomorrow with the grand finale and awarding ceremony.
