Named after the deep blue hue of the ocean, this seafood-first fine dining restaurant celebrates the richness of Philippine waters through both its cuisine and its design. Chef Tolentino presents an ode to the seas surrounding the country, showcasing the best of local seafood from north to south. While the prime ingredients are sourced locally from across the Philippines, they are prepared through an Asian culinary lens, blending familiar regional techniques with contemporary flavors.
