​A Menu Rooted in Tradition

​Chef Roberto Boggio's menu is a love letter to the culinary traditions of Turin and Rome. One of the standout offerings is the Pinsa Romana, a crisp oval flatbread that is lighter and more digestible than traditional pizza. Made from a blend of rice flour, soy flour, and reduced wheat, it offers a crisp exterior and airy interior. Toppings range from Parma Ham and Arugula to a signature pepperoni version featuring premium Italian salami.

​The pasta, all handmade daily, is equally impressive. The Cacio e Pepe is a Roman classic, house-made spaghettini tossed simply with freshly cracked black pepper and aged Pecorino Romano. For something more indulgent, the Gnocchi alla Bava delivers soft, pillowy gnocchi in a velvety cheese sauce. A Torinese classic that Chef Boggio is particularly proud of is the Vitello Tonnato, thinly sliced marinated veal served with a creamy tuna sauce.
