GUAGUA, PAMPANGA — For years, Pampanga has been called the Culinary Capital of the Philippines. Now, the world's most respected food guide has made it official. Apag Marangle in Guagua has been awarded the MICHELIN Bib Gourmand 2027, recognizing its exceptional Kapampangan home cooking at moderate prices. It is one of only two Pampanga restaurants to receive the distinction this year, alongside Tito Boy in Clark. And at the helm is Chef Manuela "Cherry" Pasion-Tan, a tireless champion of Kapampangan cuisine.
The Recognition
The MICHELIN Guide describes Apag Marangle as a place where "Kapampangan culinary traditions take center stage," with a "nature-inspired setting" providing the backdrop for "generous, home-style cooking" . The Guide specifically highlighted the restaurant's distinctive leaf-shaped menu featuring more than 70 dishes, local ingredients and house-made condiments, the fermented rice and shrimp dip prized for its savory depth, and the creamy leche flan as the perfect finish . It's a recognition not just of the food, but of the tradition it represents—a tradition that has been nurtured in Kapampangan kitchens for generations and is now being honored on the world stage for its authenticity and excellence.
The Chef Behind the Heritage and Why This Matters
Chef Cherry Pasion-Tan is no stranger to the spotlight—she is a member of the Hotels, Allied, Resorts, Restaurants and Partners Association in Pampanga and has served as a judge for HARRP Cook-Off Challenges, while also being a featured and partner chef for Mangan Boracay 2023 and Mangan Bohol 2026, bringing Kapampangan flavors to audiences beyond Pampanga . In an interview during the MICHELIN ceremony, she described the essence of Apag Marangle's cooking: "Kapampangan home flavors. Lutong bahay talaga. Very simple, very traditional. From the selection of the ingredients, to the cooking method and up to the serving—very simple." It's that simplicity—rooted in generations of family recipes—that earned the world's attention. Pampanga's absence from the inaugural MICHELIN Guide Philippines selection sparked controversy, and its inclusion in 2027 is a correction long overdue. For Apag Marangle, the Bib Gourmand is validation of decades of dedication to Kapampangan cooking. For Pampanga, it's a statement: the province's flavors, traditions, and talents are finally getting the global recognition they deserve. To Chef Cherry Pasion-Tan and the entire Apag Marangle team: congratulations. You've put Guagua—and Pampanga—on the MICHELIN map.
